Not like fruit cake exactly, more like Harry and David’s fruitcake confection than anything else I’ve ever seen, mom’s fruitcake has very little cake and lots of nuts and pineapples
1/4 cup butter
1/2 cup brown sugar
1 large egg
1 Tablespoon Grated orange 🍊 rind
3/4 cup flour
1/4 teaspoon salt
Mix above together thoroughly then pour over 1 pound mixed candied pineapple and cherries and two cups walnuts and pecans. Mix until coated. Bake in wax paper and grease lined loaf pan. Bake at 275* 2 hours, place shallow pan of water in the bottom of the oven to add moisture
This makes one two pound cake so usually triple the batch and freeze two cakes for later.
