Despite my long absence (I have a great alien abduction story I can offer up as an excuse) I am emerging from hiding to post about my latest cupcake creation: vanilla cake filled with coconut custard, topped with salted caramel buttercream, a sprinkle of toasted coconut, and a drizzle of salted caramel sauce.
I made these cupcakes for the lovely Amy Hughes (@amyhughes) who asked me to do a guest post on her blog. I wanted to be sure to impress all of her followers with something over the top.
