Thank you, Lord, for Sarah's delicious eggplant parmesan!
It's one of her specialties, and she whipped up a batch at the Outer Banks beach house. Here you see it assembled and ready to be popped into the oven. After a fun, beautiful day soaking in the sun and playing in the waves, sitting down to this wonderful dinner was a real treat — lucky us!
