Many years ago, I learned of chicory's fascinating history. Used for medicines, foods, and beverages, Egyptians cultivated it over 5000 years ago! I remember my childhood love of the pretty blue-ish flower growing abundantly each summer, and I remember its stubborn stem making it quite hard for little hands to pick. That love continues today as I delight in finding chicory standing strong and tough and beautiful along roadsides — I found this one wet with rain just right of the mailbox.
I praise you, Lord, for beautiful, useful, stubborn, blue-ish chicory — and childhood memories!
