No real need to comment, this is just what I toss into the compost pile after putting away freshly bought produce. Tops and leaves to beets with the bottom of a lettuce bunch. Sometimes my Muse has a sense of humor.
Gasp -- there's so much more to eat there!
Do you know the book "Tops and Bottoms" by Janet Stevens? Clever children's picture book about tricksters and gardening.
Thank you all so very much. Beets can be controversial, some really like them, some think that they taste like dirt. I am in the I'll eat them raw, pickled, roasted or sauteed camp. I also like them in smoothies with bananas and kiwi.
I like your muse. When our son lived in Idaho, I learned that they grow beets as well as potatoes there. He would cook all different colors of beets. So different from the canned beets my mother served!
@jyokota My Mom introduced me to beets but unfortunately we didn't cover growing them. We have such a short and harsh growing season in the high desert that I am lazy and rely on store bought. I compost for the natural flowers and such.
@craftymeg@marlboromaam@eudora Thank you so very much. Beets can really turn some off but I've learned the good nutritional benefits that they have so, I have them all the time and don't have to share since my husband has never taken to them. :-)

@sugarmuser Thank you, when I see these types of shots, my husband just sorta walks away. I guess not wanting to disturb the artist - ha ha
@tinley23 I had just topped the beets and went into 'what can I do with this' mode....
