filipino cuisine is one of the best in the world and i'm not saying this just because i am here. filipino food appeals to a lot of people because of its taste which borders on neutral and at the same time exotic. a feast of filipino dishes would not be complete without sweets. ground rice, regular or the sticky kind, is a major ingredient of any filipino sweet. coconut, abundant in the country, also is a major ingredient, as well as sugar (of course!). there are a variety of rice cakes and the 'spices' or flavouring used determines any particular rice cake.
it being almost Christmas time, 'bibingka', a kind of rice cake which is baked in an earthen pot with the charcoal on top rather than in the bottom, is popular and eaten with shredded coconut and should be complemented with hot tea. sapin-sapin are layers of coloured and flavoured ground glutinous rice. another popular one is ‘brazo de mercedes’, made of baked meringue and crème caramel.
