The passage of time

We invested in a whisky barrel 10 years ago and it has matured! 10 years worth of samples arrived today showing the development of colour, taste and aroma. Happy days...
So, not being a whiskey maker I'm going to ask; once it is removed from the barrel into sterile glass bottles the flavour development halts?

@gardencat Hi Joanne, Yes the colour and taste both come from the barrel. Whisky has to be in the barrel 3 years and a day to be called whisky but ours has been there 10 years so this is the range with a sample from each year. We collect the bottled product in the middle of next month and yes, the flavour development etc stops then.

@lizochka my husband and the other syndicate members have been able to visit every year though to cuddle their barrel!
