I bought some Kom-Kom brand kitchen knives from Thailand, via Amazon.com. They are very cheap, and usually sold in restaurant supply stores.
They are quite sharp and they cut great, but the wood handles are quite rough from the factory. I sanded them down, put on 2 coats of paste wax, and ran them over a buffing wheel. Now they are smooth and shiny. I don't know how well that finish will hold up to kitchen use, but it's an improvement. These are totally my favorite knives now.
I'm a sucker for kitchen knives and these look great... especially after your intervention. Congratulations on 365 - your project has been a breath of fresh air over the last year.
@littleconnie@vignouse - Thanks! I kind of lost track of what day I was on and the 365th snuck up on me. I wish I had done something more dynamic than a "whatever's on my workbench today" photo for the occasion!
