Peruvian Green Sauce #3 by darylo

Peruvian Green Sauce #3

Best one yet. Bought Peruvian Aji Pepper Paste for this batch. I used it to baked the potatoes, for dip for bread, potatoes, and steak. Yum. Vegetarian daughter went to trivia, so I snuck a steak onto the grill. I don't eat steak often anymore, but this was delish!
And it looks delish! So does your green sauce! Lovely appetising image.

As I was scrolling down and saw this, I thought this has got to be Daryl's.
That steak looks fabulous and those potatoes are just perfect to go with it. Mmmm

@jgpittenger It's so addictive. The sauce this time was one full bunch of cilantro, 6-8 jalapenos seeded and ribs removed, 1 tablespoon of aji pepper paste (I bought it online), 2 green onions, 2 garlics, juice of one lemon, 1 T olive oil. Mayo (not much--trying to work that out of the equation). If you want spicier, keep the seeds/ribs on peppers and do less! Or add a habenero for extra spicy if you don't have Aji Paste--it's a nice jarred version of peppers (can go in anything). Once I had all the sauce made, I just swished some cutup potatoes in a portion of it for baking. 425 oven. Roasted about 25 min. They are better dipped in the sauce frankly (after roasted). I made this batch one night when some of my daughter's friends were here and they were eating up teh green sauce dipping bread in it--I love this as much as my pumpkin seed tabouleh! :)
