I tried a flash today-not liking the result, but it is super dark and rainy here. Hummus is my fav to make to take to parties, and I made this dish for a Kentucky Derby Party.
Recipe (this makes a lot, so it can be halved):
3 cans garbanzo beans, rinsed
fresh lemon juice from 3 lemons
Olive oil
3 garlic cloves
cumin
paprika
salt
Using a food processor, put in the garlics to mince. Then add the lemon juice, the beans, salt (to taste for all the spices) and pulse the mixture. Then put the mixture on high and pour some olive oil in until the mixture starts to soften up and fully emulsify--I usually do a "slow count" for each can of beans, so in this case I went "1...2...3" and then stopped with oil--you can also add water to help if you want to cut down on olive oil (but who in their right minds wants to do that, right?). Add salt, spices, and just do it to taste. Some people add tahini--I'm just not a fan of it.
Serve with some pita wedges, fresh veggies (I used carrots, peppers, and cucumbers). Oh, and if you have glass bowl, slide some lemon wedges down the side as a decorative feature! I'm always making presentation a central focus of food!
