Tonight Was Yummy

My biggest passion (other than writing and now photography) is cooking. I like to create recipes from scratch, and this is one of them. I did borrow an idea from WebMD for some coconut chicken dish--meaning I like the idea of coconut milk and lime juice--that's it!

Here is what I did tonight with some ground beef, but I prefer it with ground chicken breast (lean).

1 lb. of ground chicken breast meat or lean ground beef
1/2 Whole cabbage, cut in wedges
1/2 cup lite coconut milk
1/4 cup fresh lime juice
Chopped up mix: cilantro, red or yellow mini peppers (about two of the larger ones), 2 green onions (optional add ins: carrot diced, jalapenos sliced)
1/4 of a medium sized vidalia onion sliced thin
a thumb's size of fresh ginger diced
Salt to taste
whole peanuts unsalted

Combine the coconut milk and 1/8 cup of the lime juice together and set aside. With the other 1/8 cup of lime juice mix together with the "chopped up mix." Cook the meat in a saute pan on med-heat. Once cooked through, drain any fats, then add the coconut milk and lime juice mixture--turn the temp to simmer. Add in the sliced onion and the ginger to the pan--add salt to taste. Once the coconut/lime mixture has reduced some in the pan, pour the mixture onto plates with a wedge of cabbage beside it. Then dish out the fresh chopped veggies on top (they have been marinating in the lime juice). Throw on some peanuts too! Oh, and if you like things spicy, buy some Sriracha Sauce, and pour on! This is a variation of a Thai larb dish, and it's super easy to make! It's also quite the healthy meal. Both kids ate it too! Woohoo!

Use the cabbage leaves to wrap up the mixture. And be ok with getting messy. :)
Your food capture is so inviting, and the recipe sounds very good. Thanks for sharing. I also have loved cooking, even though lately I am devoting so much time to photography and this project.

This looks and sounds good! And gluten and dairy free! I must try this! Food photography and making it look good is hard, but you did it. I like the cabbage wedge in back.
