Salmon Salad ala Taffy

This photo does not even come close to doing proper justice to this dish. Taffy made it for Junko and me while we were in the Smoky Mountains, and today I had a hankering for it for lunch. It's best made with smoked salmon, but this is my instant fix with canned salmon. Ah, good memories and an excellent break for lunch before heading back to work! Thanks Taffy!!

@taffy I think the one fav on this photo means that 365 loves Taffy! It got on the popular page. This has happened with several of my entries lately that have only one fav and just a few views/comments. Magic Monkeys are back I think. Regardless, I feel honored that my attempt at your awesome dish resulted in a PP! Next time I'll pull out the real smoked salmon and wow the monkeys. :)
