I did a time lapse of a huge tent going up for an outside event. Turned out really well and was easier than I thought it would be to set up. I used my Canon 40D with the Canon TC-80N3 remote timer.

That's the best time lapse tutorial I've come across. Wish I would have seen it earlier. I actually just bought an old used Canon 20D that I'm going to be putting into full-time time lapse duty. I did a time lapse earlier this month for my project and got hooked.
