The crockpot peach jam from last week...was not so good. It smelled heavenly all day long, but when I went to turn it off at the end of the cooking time I had a nasty surprise...it turned brown, didn't set, and tasted bitter. And I felt a bit bitter thinking about those delicious peaches being wasted. :( So I tried again, using the regular cooked jam recipe included in the box of pectin.
I feel certain that I did something not-quite-right this time, too - the chunks of peaches seem like they should be evenly distributed instead of mostly at the top - but the leftover bit that wasn't quite enough to fill another jar set up quite nicely and tastes good, so I guess it's more of a cosmetic thing than anything. Still makes for pretty photos!
