I realized as I was prepping dinner that I had not taken my 365 photo today, but given that I was chopping three veggies to start a soup and that there is a triptych challenge going on...well. It seemed like a good idea at the time. I wish I had a cuter cutting board and that the lighting in my kitchen wasn't so awful!
Here is the basis of practically every soup I ever make. Even when the pantry seems bare, as long as I have these three ingredients, some chicken broth, and either pasta, beans, or rice, I can have dinner on the table within an hour. I used to think that my mom had a superpower, because she could open up what looked like a nearly empty fridge, freezer and pantry and somehow have the most delicious meal ever going within minutes - turns out, the superpower is just years and years and years of trial and error and knowing what never to run out of. :)
Tonight was sort of pasta fagioli, with cannellini beans, ditalini, and leftover cooked chicken from last night. No tomatoes, but oregano and garlic. Yum!
