M is for Muffins

I am so tired of eating yogurt, smoothies, mashed potatoes, cottage cheese, applesauce, and very lightly toasted frozen waffles.

I'm finding that muffins are pretty easy to eat post-wisdom-tooth removal, but ridiculously high calorie and low nutrition, and I'm still trying to stick to healthy eating options and walking 10,000 steps a day, so...

Homemade blueberry-peach-greek yogurt-oatmeal muffins to the rescue! I modified this recipe to use what I had on hand, which meant a combo of vanilla and peach greek yogurts instead of plain, 1/4 cup of white sugar instead of the honey plus coconut sugar, and just regular skim milk in place of the almond milk. http://www.runningwithspoons.com/2016/01/22/blueberry-oat-greek-yogurt-muffins/

Despite being only very mildly sweet, the kids inhaled them, and honestly, so did I!

My daughter ate a lot of bananas after they removed hers. Hope you can eat what you want soon, although these look delicious!
