Wintering in Sunny Queensland

With winter come the grey nomads to enjoy the sunshine of Northern Queensland. They seek out the free camp sites provided by councils for their use; set up their solar cells, portable clothes lines and Ozpigs; catch a few red claw to chuck on the barbie and Bob's your uncle.

Grey Nomad = baby boomers who arrive in their varied styles of campers
Ozpigs = little round portable stoves on legs.(See black one in the front of the tent)
Red Claw = fresh water prawns
barbie = Barbeque
Bob's your uncle = everything is right in your world

Here's Richo's recipe for Garlic Red Claw cooked on top of his Ozpig.
Ingredients:
•500g De-veined Red Claw
•1 cup diced bacon
•3 x cloves finely sliced garlic
•Half of one red onion finely sliced
•Half of a red chilli, seeds removed
•5 x tbs butter
•Half a cup of chopped parsley
•Extra virgin olive oil
•Salt and pepper
•Crusty bread
Method:
1.Add your bacon, garlic, onion and chilli to a pre heated pan and stir carefully.
2.Add a healthy "Sploosh" of olive oil as soon as the ingredients are in and simmer for a minute or so.
3.Add the redclaw and a generous seasoning with salt and pepper.
4.Now add your butter and simmer for another minute or two, until your prawns are cooked through.
5.Lastly, add your chopped parsley and toss through.
6.Serve with a slice of crusty bread - perfect for soaking up all that lovely butter!

I find it odd to have sunshine in Winter when we can have freezing temperatures or snow. Lovely capture and interesting recipe.
