Delightful
Making the most of a beautiful coral trout given to us by my brother-in-law. Two meals of fillets now a lovely dish from the meat on the back bones and cheek. Good to the last drop, as they say.

Something like a soufflé. Pre cook everything - the potatoes, frozen mixed veges and the fish. Line the bowl with the potatoes sliced, Fill this base with some mixed veges and top with the fish stripped from the bones. Then I pour a white sauce over this and top with grated cheese and bake for about 20 mins. Makes a little bit of fish go a long way.
