Hakodate, the port town in southern Hokkaido (the north island of Japan), has some of the most incredible fish I've ever eaten. The city sits on an isthmus with the Pacific Ocean to its east, and the Japan Sea to its west. One of the characteristics of the city are the squid ships that go out at night. That string of glass bulbs you see in the photo on the ship light up, which attracts the squid, making them easy pray for the fishermen's nets, and unbelievably fresh squid on our plates the next day. If you've hesitant about eating squid, come to Hakodate and prepare for deliciousness!
