Chicken Primavera by allie912

Chicken Primavera

Here's the recipe I got from a friend on FaceBook. After sharing it with several friends, I think I am the first to actually make it, so I'll give you the benefit of my experience. Best of all, it was easy to make and the flavor was A+ . However I think you may want to reconsider the proportion of ingredients. The recipe makes 4 chicken breasts. John and I actually split one breast and that was plenty. (I made two so we have enough for a second meal.)
Second, the recipe called for 3 tomatoes, 2 yellow bell peppers half a red onion and 1 zucchini. I actually used half of one tomato and half of one pepper as well as a small zucchini and just a section of an onion and only got a small portion of those veggies in the chicken. The rest I placed in the pan around the chicken. Which brings us to a final point. The recipe says to drizzle olive oil and season chicken before adding the vegetables, but clearly you want the veggies seasoned too, so I added the seasoning and oil after I added the vegetables.
I also cooked the chicken 35, not 25 minutes because I don't like underdone chicken. It came out moist and tender.
So that is my experience and here is the recipe for you to try:
