Curried Eggplant and Chickpea Stew

For vegetarians and flavor lovers in general. Eggplant and onions, seasoned with curry, roasted under the broiler. A can of chickpeas and liquid simmered in tomato paste, lemon zest and more curry. All combined with lemon juice and served over basmati rice. I added some chopped salad greens because I didn’t have any cilantro. Very tasty on a cold winter’s night.
