Stop it !!
I have had a really busy day and never got time to sit down and have real food. Survived mainly on butties ( that's sandwiches), this looks delicious and has made me feel very hungry. I can almost smell the wonderful aromas flooding off this.

Oh my...I would get fat if I lived near you. I just printed out the ripe and will get ingredients for it a sap. Looks like you didn't slice it and added potatoes and peppers? Any other changes you'd recommend? The picture makes me drool

@jgpittenger @taffy this was so good. I'm a lazy cook, so I didn't slice. What I did do was put on the broiler at the end to try to get the signature crisp dark bits. I just roasted some carrots and potatoes at the same time as the temp was perfect to do at same time. Next time, I will decrease the oil. I was not clear how much of the marinade I include in the oven and I put it all in--I can see this being an amazing sauce/marinade to roast eggplant or other veggies too if you want to make it vegetarian. The peppers on top are just the mini peppers sliced. For more kick, I would add some sliced hot peppers too! But the chicken was so moist and full of flavor. Will be using the marinade on other dishes! Hope this helps. Oh and I sliced the onions and kept them separate in the oven to see if they would carmelize, which they did--with the marinade @radiogirl

Got the ingredients...tomorrow! Re the onions...how thick did you slice them and did you cook them at the same high heat?
April 26th, 2016
@jgpittenger I sliced like I would for a sandwich so more on thin side. Same heat but keep an eyeon them. Good luck!!
