That's a 1D Mark III, introduced in 2007. An awful lot has changed since then, and the 5D Mark III is a totally different (and much more complex) beast! But on the plus side, the 5D Mark III manual is the best Canon manual I've read.
That will still be of use to people who have Canon cameras of a similar age, such as the 40D, 50D, 5D, and XSi. Not all the options will be available, but the menus are fairly similar in layout and function.
@abirkill LOL I guess I should have looked at the date. Well this can be a thread on Markiii settings. Thank you. Mine will be here tomorrow just reading everything I can.
(I save the file and keep it on my smartphone -- very useful for figuring out which of the crazy number of AF mode settings I need for unusual situations!)
I agree with @abirkill - the AF options are amazing, but it took me quite a bit of reading to figure out how to get the best out of them. http://learn.usa.canon.com/resources/articles/2012/1dx_guidebook.shtml was initially written for the 1D AF settings, and then updated to include the 5d miii is well worth a read (or two...)

You've probably already got it, but in case not, you can also download the manual and have a read through it before the camera arrives:

and http://garyluhm.net/canon-5d-mark-iii-autofocus-ai-servo-birds-flight/ has nice practical examples, but I would adjust some of the settings a little.
