Apologies to vegans. This is just the protein part of our weekly Saturday soup kitchen pickup from Trader Joe's. Not shown are the box loads of fresh fruits, vegetables, breads, and desserts. We cut up the beef, date it and freeze it in 5 lb bags. Each meal (200 lunches) we make takes about 50 lbs of protein. We have 8 freezers - poultry, pork, beef, fish, fruit/veggie, bread/dessert, cheese, and a stock/egg/misc/overflow freezer. Monthly lunch menus are planned around freezer inventory. We certainly couldn't prepare and serve the meals we make without the incredible generosity of donors like Trader Joe's, Food Lion, Publix, Amazon, and our awesome individual donors. It blows my mind.
