I came upon this recipe on FaceBook and thought it was worth pursuing. I had every ingredient but the old-fashioned rolled oats so I put out a call through school email. I knew my colleagues would come through. Within an hour I actually had the familiar round Quaker Oats box in hand. So in case you are interested, here is the recipe:
37 Calorie Brownie
3/4 cup nonfat Greek yogurt (I used vanilla)
1/4 cup skim milk
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar)
1 egg
1/3 cup applesauce
1 teaspoon baking powder
1 pinch salt
Preheat the oven to 400°F. Grease a square baking dish (I used 8"x8"). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares.
So how was it? Surprisingly good. I used Hershey's Special Dark cocoa for extra impact.
I do think my baking powder was too old so next time I will buy some fresh powder and expect the batch to rise more. I added low-fat Cool Whip for a bit of low calorie indulgence. It definitely tasted richer than 37 calories.
It does sound good and it looks delectable in your shot! But you do realize that all the artificial sweeteners in your Cool Whip negated the healthy Stevia in the brownies themselves, right? I will have to give these a try- they do sound good!
