While in Chiang Mai I did a cooking class. Here Oay, the instructor, is demonstrating how to flame cook in a wok. I had a go but decided it was far too risky for my home kitchen—and for my eyebrows!
Impressive - I'd probably lose my eyebrows, haha. My daughter did a cookery lesson when she was in Chiang Mai. She learnt how to make Pad Thai but couldn't seem to make it the same for us when she came home - she said it tasted horrible here but I still liked it.
Pad Thai seems such a simple dish and I love it but it's actually quite complex to get the flavours right. There are many variations and Oay was demonstrating how to cook one of the variations and it was spectcular in flavour. @nickspicsnz
