Leftovers

Part of returning from a trip is that I can cook at home! I spent the day "catching up" with so many things--it was a little overwhelming, but I carved out some time to shop for groceries. I actually shopped for a meal I did not make tonight (but will tomorrow) because some meats were on sale.

On my trip to Nebraska, I was the very fortunate recipient of an amazing meal with red lentil soup, roasted veggies, and toasted sesame infused rice--oh, and before that, a lovely salad of mixed greens, fresh clementines, feta, toasted nuts, and fresh chopped veggies. It was one of the best meals I've ever had!

Tonight, I wanted to capture the roasted veggies and the marinade my friends used (a little tamari, rice vinegar, olive oil, fresh garlic, and balsamic vinegar). So we had steak (apologies to my vegetarian friends) with lovely roasted veggies. This is the leftovers.
