I grow quite a few varieties in the garden, but it is nothing compared to the estimated 2000 varieties that exist overall. Not to be eaten in any way, as they are toxic.

I would never have thought to eat one of these, but then, I would have thought the same thing had I been the first to encounter an artichoke.
