Why do other people's gingers bloom?

We saw this beautiful ginger at Mercer Botanic Gardens in Spring, Texas.

I also have gingers, both produced from a single plant I bought 20 years ago at a church fair. I am attached to it so I moved a couple of offshoots to Florida, where they flourished, and then back to Louisiana. They have survived freezes and hurricanes and bounce back. The foliage is beautiful but they have never bloomed.
An interesting question for certain. I don’t think mine have ever bloomed either now that I think about it. This one is a beautiful color and I love the detail in the photo FAV
