What a beautiful beginning to the eggplant. Love your photo. Do you have a simple recipe? My husband and I liked it once at his brothers house and see them for sale at our local Farmers Market but do not know how to make one tender and flavorful. No rush on a response to this at all.

@darsphotos Thanks Darlene and I don't have a good recipe! I tried to cook some a few years ago when a neighbor gave me some and it was a disaster. I think my husband just planted it for the pretty flowers and fruit because someone told him it was easy to grow.
