Thanksgiving is my husband's favorite holiday for this very reason! He LOVES the leftovers! I am tired of fixing Thanksgiving dinner every year and had to break my neck last year to get out of cooking it. Although family and neighbors brought us food the down side of that was there were no leftovers for him to enjoy.
Now that looks like a great feast! And you did not have to break your neck ... You could have just said "no!" Haha

I never get tired of Thanksgiving leftovers, but I didn't get any leftovers but pumpkin pie this year.

@anazad511 @barbtatum @vstap @marilyn @tunia @digitalrn My husband's favorite holiday so I overcook so we can have them for several days. We usually end with hot turkey sandwiches or turkey soup!

Yum. Love your photo, Katy. You made a beautiful plate of leftovers. It was just the two of us and our 17 pound stuffed turkey on the BBQ. Still eating leftovers and made a turkey soup. How do you make sweet potatoes? I have some here but not sure what to do with them.

@darsphotos Well thank you so much! I fed 5 with a 15 pounder! But we had lots of sides too!

You can bake them or cut them up and boil them. I always put them in a covered dish in the microwave for 5-10 minutes depending on the size.

@ruthmouch LOL! you are so right! I was a fairly drastic step and l promise it WAS unintentional. Truth be told I much prefer cooking to what I went through last year but you know how I like to whine! ;~}

It was delicious if I do say so myself! Thanks bunches!

@grammyn Wow, you did great for the size turkey you had. We had mashed potatoes, stuffing, turkey, green beans and gravy that we made. Kept it simple but still a lot of dishes for the two of us. Worth it though with the left overs. Sounds like you had a really nice Thanksgiving.

Thank you so much for the instructions on the sweet potatoes. Do you put anything in the dish in the microwave and do you peel them too?

I am so glad that last year is over for you, well the worst of it. I hope your eyes are doing ok from the accident and cataracts and you can see clearly. Take care.

Just the potatoes in the dish! After they are cooked the peel comes off easily. My husband eats them peel and all.

Holy cow!! Is THAT why you broke your neck??? Just to get out of cooking a turkey dinner? That's a bit dramatic isn't it?

LOL;-)

This does look yummy. I think I'll have to bite the bullet and cook a turkey dinner for Christmas. I bought just a 1/2 breast for Thanksgiving so I could use it for sandwiches, and I didn't make any sides.

I miss all those sides. :-(

Excuse me while I go wipe the drool off my chin. :-P

@pasadenarose Lol! Oh how I have missed you!

No that is NOT why I broke my neck but it did occur to me this year it worked well to keep from having to cook. Now Christmas is the one I don't cook for. We always have meat pies after midnight mass and open presents then go to bed around three so I am too tired to cook and we just eat leftover meat pies on Christmas day.
