Thanksgiving is my husband's favorite holiday for this very reason! He LOVES the leftovers! I am tired of fixing Thanksgiving dinner every year and had to break my neck last year to get out of cooking it. Although family and neighbors brought us food the down side of that was there were no leftovers for him to enjoy.
Yum. Love your photo, Katy. You made a beautiful plate of leftovers. It was just the two of us and our 17 pound stuffed turkey on the BBQ. Still eating leftovers and made a turkey soup. How do you make sweet potatoes? I have some here but not sure what to do with them.

@ruthmouch LOL! you are so right! I was a fairly drastic step and l promise it WAS unintentional. Truth be told I much prefer cooking to what I went through last year but you know how I like to whine! ;~}

@grammyn Wow, you did great for the size turkey you had. We had mashed potatoes, stuffing, turkey, green beans and gravy that we made. Kept it simple but still a lot of dishes for the two of us. Worth it though with the left overs. Sounds like you had a really nice Thanksgiving.

This does look yummy. I think I'll have to bite the bullet and cook a turkey dinner for Christmas. I bought just a 1/2 breast for Thanksgiving so I could use it for sandwiches, and I didn't make any sides.
I miss all those sides. :-(
Excuse me while I go wipe the drool off my chin. :-P
No that is NOT why I broke my neck but it did occur to me this year it worked well to keep from having to cook. Now Christmas is the one I don't cook for. We always have meat pies after midnight mass and open presents then go to bed around three so I am too tired to cook and we just eat leftover meat pies on Christmas day.

You can bake them or cut them up and boil them. I always put them in a covered dish in the microwave for 5-10 minutes depending on the size.
