@jgpittenger I'm making confiture (not jam). I collect the fruit after the first frost, but it must not freeze. I clean it, dry it and pour it over with thick, boiling sugar syrup. When they cool down, I drain the syrup, bring it to a boil again and pour them over the fruit. I repeat this activity four times. The fruit should already be soft. They are perfect for winter tea.
