I was going to eat the leftover ribs for dinner, but I saw some corned beef at the grocery store and had to have some. I bought the smallest one they had, as I'm the only one who will eat it. I cooked it in my Instant Pot for about a half hour and added the cabbage and potatoes for another 10 minutes. Best corned beef and cabbage I've ever eaten. So glad I have leftovers for tomorrow's lunch.
