Cod heads

Air-dried cod fillets are called stockfish and they were the subject of my main photo today. After the cod has been decapitated the tongue (a delicacy!) is removed, and then the head also is air-dried. These dried heads are exported to west Africa. principally Nigeria, where they have become a staple food. I wish I could convey to you the olfactory experience of this place! The things I do for 365Project!

Where is this again? Do they do this year around, or only in the winter? Great layout with the closeup in front of the long view.

How surreal. Wish I could see it blown up larger. What is that saying one always hears? "Cod heads prevail buy keeping their heads when everyone around them are losing theirs."

@houser934 @777margo It is in the Lofoten islands, Northern Norway, just inside the Arctic Circle. They are catching the cod now and will leave the fish to dry until summer. They do the same process in Newfoundland.
