The butcher's shop in our village doesn't look like this. This one is in the center of Perpignan, and I suppose is aimed at a wealthier and more trendy clientele. It is opposite the Prefecture where I went to be fingerprinted for my residents card, something made necessary by Brexit. It proves that I still have the right to live and work in France, even though I am not longer an EU citizen. It doesn't restore the other rights we lost, the right to live and work elsewhere in the EU, or have access to emergency healthcare. Those rights are gone for all the British, but hopefully will be restored to me if my application for French citizenship succeeds.

I have visited a pretty cool butcher shop in Brooklyn, NY with another foodie friend, but I've never seen something quite like this. I live in the south of the US, and I rely on our local butcher within the grocery stores, but the "art of butchering" is not the same as it used to be where I live. I also have been eating much less red meat, so my need for a butcher to help with specific cuts has been reduced dramatically.
I hope your citizenship goes through. I was in France when "Brexit" was 1st announced years ago. I was in Cassis and I remember thinking that if the world would work together more, we'd be able to resolve problems, not create them. Alas, years later, it's still a mess.
