Our Olives slowly ripening .....

in the Grove. Soon I will be busy picking. They then soak in a solution of salt water for 6 weeks, till the bitterness is out. The solution gets changed weekly before they get put into glasses with salt water, a slice of lemon, thyme and some garlic. After a few weeks they are ready to be eaten.
That is so cool. Keep me some 😜😜

Amazing, I love olives but they cost a lot over this way, but if you have to do all that work to get out the Bitterness I see why...Fav

I never knew what you did with them! I have one near my front door but I doubt I will ever get any olives grow on it

@dlovinger We have at least 120 trees Denise. There are so many , that anyone living here is allowed to pick them. Quite a lot gets left for the birds who seem to enjoy them too when overripe ;-)
