Bears leek (Allium ursinum) completely covers the forest floor of our beech forests in early May.
With pine nuts and parmeggiano cheese, the new leaves are perfect to make fresh green pesto. But it is important not to mix up with lilly of the valley leaves (sometimes growing at the same places), as they are extremely poisonous!
lovely presentation of the flower. I have some home made pesto in the fridge. The leaves with mint . caper and oils, though I do like it with parmesan too.
