St. Patrick's Day Dinner in the Making

Even though to be truly Irish I think it should be bacon and cabbage, I've always followed the lead of Irish-Americans and gone with corned beef when it comes to St. Patrick's Day dinner...because I love it even more than bacon. ☺

Corned beef was never a big thing in Ireland. The Irish immigrants in the US started making corned beef and cabbage with the corned beef they got from their neighborhood Jewish butchers. 🤷‍♀️

You will all be missing the parade this year I imagine! I can’t se that it would still go ahead somehow. Corned beef is very tasty!

@happypat No parades this year, Pat. But the bars are open (half capacity). We just saw a leprechaun (a guy in costume) going down the sidewalk heading to the neighborhood bar. Wish I'd had my phone handy to snap a photo. ☺

I fixed the same meal. My mother was full Irish. Ancestry.com confirms I am 86% Irish. My school & Church are named St Patrick. Every day is a good day to be Irish.
