Tonight was our monthly sushi night at a local restaurant. The restaurant is normally closed on Mondays, but opens one Monday a month for Sushi night. Our friends, Henri and Linda VanDam were instrumental in bringing this wonderful sushi chef to our little town. The sushi chef travels over an hour to make us sushi. As some of you may remember, Henri passed away three months ago after his very long battle with cancer. This roll appeared on the menu as a celebration of their wedding anniversary back in December and has been on the menu ever since. It will probably always be. It's difficult for Linda to come be with us without Henri, but he is here in spirit and in our hearts. My Linda is one amazing gal. We all miss Henri, as he was bigger than life itself.

How wonderful to have a chef's dish created after you. I am sure that little touch must be one of the things that heartens Linda despite obviously being so difficult. Thank goodness for good friends to share the pain with. And, what an amazingly presented dish!
