Lemon Meringue Pie is one of our favourites around here. Friends coming for dinner later so I started last night. The well rested pastry was a new recipe Allan found (for another pie) and had a teaspoon of white wine vinegar in with the water to bind the dry ingredients. It certainly is best I've made in a while.
Three good things
1. Overnight rain....just enough to satisfy plants from yesterday.
2. Friends coming
3. Feet up....bruised ankle much better....though could take several weeks to clear up completely.

Very simple recipe.....pastry base, 2 large lemons (use grated rind and flesh). 3 egg yokes and tin of condensed milk for filling, and the egg whites and 5oz caster sugar for the meringue. 😄
