I just took these incredibly beautiful peaches, peeled and pitted and sliced them up, and put them in the crockpot with some sugar, pectin and lemon juice...so that in the deep, dark winter, when summer seems like it will never come again, we can open a jar of warmth and sunshine.
Crockpot jam, where have you been all my life? If I had known it was this easy I would have done it with strawberries earlier in the summer, too! I wish I could take a photo of the amazing aroma filling up my house right now. :)
