This is a little off topic, but I have been reading a book that you would like, Cooking for Geeks. It's all about the science of cooking. Sure, it has some recipes, but it's more about the process and the reactions that happen during cooking. I just read about how to make ice cream in 30 seconds using liquid nitrogen. Much of the book is more practical than that.
@tdaug80 Thanks Tim. This book looks original and I am looking forward to reading it. When we will have realized all recipes of the book and made nice pictures of them, we might consider producing an illustrated edition of it.
