In my profile, I made the claim that my jerky was legendary. Well here in Oz it is anyway. Well maybe not Oz but certainly in Brisbane. At least amongst my family and friends. A couple of them like it anyway. Nanna wont touch it.
So this is step one - marinating the meat strips overnight in my special, highly secret mix of 133 herbs and spices plus assorted liquids. By morning, all of that liquid will have been absorbed by the meat.

lol... "legendary in Oz". I bet if you gave them all a free sample, it would be! That's quite a process you go through to create your homemade jerky. Imagine it tastes doubly delicious because you've made it yourself.
