these ones are mostly Paterson's Curse (aka Salvation Jane or more formally Echium plantagineum. It is toxic to non ruminant grazing animals.
Even though I know it is such a pest and it spreads each year - I saw it almost everywhere in the last week of my road trip, yet I can't help but admire the purple flowers covering the sides of hills. I remind myself of the extreme nuisance it is every time I see it
