Vegetable, though the U.S. Supreme Court declared it a fruit in 1947 for purposes of regulation and duties (see Wikipedia). Rhubarb crisp and rhubarb pie are favorites among certain members of our family. I've even made rhubarb cookies, which were so delicious they disappeared almost before they cooled. Hint to oldest, whom I am trying to entice home for a visit: It is almost ready for baking!

Lovely pic. Vegetable - definitely. I was horrified to find out that it has lots more calories than I thought and that it is a poor source of dietary fibre. That didn't stop me stewing up a huge bowlful to have on my cereal or as a snack. I still think it is good for me!
