Continuing to explore homemade soup from leftovers. I roasted some purple and orange carrots for dinner and saved a big purple and a few orange ones for the next day's soup puree. Cut up the carrots, added broth (a bit too much, but I love liquidy soup). Added fresh Italian Parsley. Brought it to a boil, then pureed it in the pot with my wand blender. I always have grilled meats in my freezer so I defrosted some chicken, cut it up, added a dollop of greek yogurt and a few green onions. Very earthy tasting. Yummers. Photo taken with phone.
@vignouse thanks Richard. I'm the same way. I have made a conscious effort to make something every day from leftovers, and soup seems to be the best way to do it (and it's amazing how much the spices from roasting something the night before really make soup making so easy the next day). I'm learning to grill also lots of meats in one sitting vs. for that very night's meal. That way, I always have a topping for a soup or a salad.
