It is almost impossible to procure fresh shiitake here as well, but the friend who grew these mushrooms explained the process to me, so I am going to have a try. He ordered the shiitake seeds online at https://www.fermedesaintemarthe.com, which is one of the best references in France for organic seeds. Then he collected a few pieces of logs in the woods (anything except pines), drilled a few holes in them and put the seeds in the holes. Then he stored the logs in a dry place with his stove logs and forgot about them for 2 years, giving the time to the mushroom roots to develop. Then he put the seeded logs in the rain for a couple of days and got them covered with mushrooms. I think it is worth a try, it just requires a lot of anticipation.
