While peeling the onion and garlic, I started to wonder which of them is more important for the preparation of Christmas dishes. I think they are inseparable and complement each other perfectly. Here I peel the garlic to add to the pickled beets. In Poland, red borscht is one of the basic dishes on the Christmas Eve table. But I pick beetroots all year round. We drink this silage - it's great for anemia.

Love how you composed this. Yes mirepoix and garlic in most things here to. We just love beets. We usually eat them in salad or as a side dish. But Brussel Sprouts and Broccoli are the usual veggies at the Christmas table.
