Firstly, I hope you enjoy your time in Munich. It will be getting very lively in the next few days.
You wanted some tips on photographing Oktoberfest, well the best advice if you are going to the Wies'n is go early and not at the weekend. It gets so busy it is impossible to take any good photos.
The shot I used for the tilt-shift was taken on a weekday morning, early. Also, if you want to take some night shots a Tuesday tends to be a little quieter.
As for the parades, the Trachten parade on Sunday would be the best bet for a few nice shots, again not quite as busy as the Saturday one. It starts at 10 o'clock at the Maximilianeum but if you can get there an hour or so earlier you can see the groups, animals and bands getting organised along the river. This is a great place to see the costumes and indeed the horses close-up. Get there early, everyone is in a good mood and they love to be photographed in traditional dress.
A good spot to catch the parade en route is Pacellistraße, at the end of Promanadeplatz. They will be coming from in front of the Bayerischer Hof Hotel and the twist in the road means the parade will be walking towards you as it turns with the road.
