Flaming the Fish

"Katsuo no warayaki / Bonito Grilled in Straw" is a dish exclusive to Kochi. Long straw, nearly four feet long, are set in flames and the chef flash-grills the fish within the flames. Safe, but a little hard to photograph, behind glass.

I really like this one. The fish, the flash of color...then in the shadows, the chef.
